Parents should set good example

Your children often mimic what they see their parents eating, and so you should try to eat healthy foods. Let your children know that you love the flavor and the juices of a fresh peach.There is no need to say to them, "the peach is good for you," let them find out for themselves, keeping in mind it is very important for everyone to eat a variety of foods. Try to avoid eating the same old foods over and over, but add new nutritional items. Change what you keep in your food pantry - having sugary, salty and high-fat snacks even makes healthy eating more difficult. Replace the high-fat foods, chips and cookies with low-fat pretzels and low-fat items.

Using foods as a reward for a good behavior or making good grades or taking away food as a punishment can lead later in life to putting too much emphasis on the importance of foods and can lead to problems later in life.

Try adding fruits, whole grains and veggies to your favorite dishes. Add carrots and broccoli to your favorite chicken casseroles. For children that don't like veggies, try slicing them or shredding them up in very small pieces and adding them to meatballs, burgers, pasta sauces and meatloaf. Use brown rice and whole wheat pasta for some of your dishes. You can always top you fat-free ice cream with strawberries, fresh peaches or even plain cheesecake topped with fresh fruit. Gradually your children will accept other changes such as fruits and cheeses for their desserts.

Parents, don't forget the 10th annual Easter parade April 13 at 2 p.m. in downtown Parkersburg. Also, April 11 at 6 p.m. in front of the Parkersburg High School campus is the spring-Easter celebration following the annual egg hunt sponsored by the Elks Lodge 198 with 4000 eggs hidden. The lucky child that finds the golden egg in each category will receive a beautiful Easter basket. New this year, two bicycles will be awarded. Until next month!

Jiggly Banana Split

1 banana

3 gelatin snack cups, any flavors

2 tablespoons whipped topping

colored sprinkles

1 maraschino cherry

Peel banana and cut in half lengthwise. Place banana in serving dish, separataing halves. Unmold gelatin snack cups by dipping partially in warm water for a few seconds. Slide gelatin from cups; place between banana halves. Top with dollops of whipped topping, sprinkles and cherry.

Peanut Butter-Pineapple Celery Sticks

1/2 cup low-fat cottage cheese

1/2 cup reduced-fat peanut butter

1/2 cup crushed pineapple in juice, drained

12 celery sticks

Combine cottage cheese and peanut butter in food processor. Blend until smooth. Stir in pineapple. Stuff celery sticks with mixture.

Funny-Face Cheese Ball

2 packages reduced-fat cream cheese, softened

2 cups shredded Mexican-blend cheese

1 1/4 cups shredded carrot, divided

2 tablespoons fat-free milk

2 teaspoons chili powder

1/4 teaspoon ground cumin

1/4 teaspoon garlic powder

2 slices pimento-stuffed olives

1 pepperoncini pepper

3 slices red or yellow bell pepper

reduced-fat shredded wheat crackers and celery sticks

Beat cream cheese, Mexican-blend cheese, 1 cup shredded carrot, milk, chili powder, cumin and garlic powder in large bowl with electric mixer at medium speed until well blended. Shape mixture into ball. Arrange remaining 1/4 cup shredded carrot on top of ball for hair. Use olives for eyes, pepperoncini pepper for nose and bell pepper for ears and mouth. Serve immediately or cover and refrigerate until serving time.

Peanut Butter Spread

1/2 cup part skim ricotta cheese

2 tablespoons peanut butter

1 tablespoon brown sugar

1/4 teaspoon cinnamon

4 flour tortillas

1 sliced banana or apple or jam

Mix ricotta cheese, peanut butter, brown sugar and cinnamon together. Spread equally over tortillas and cover with banana, apple or jam. Roll tortillas. Keep leftovers refrigerated.
