Make ahead meals make dinner easy

Ellie Krieger makes meal time easier with make-ahead meals in "You Have It Made" (Houghton Mifflin Harcourt, $30.)

The New York Times bestselling author has come up with more than 140 recipes for delicious and nutritious meals that can be made ahead of time and sit in your refrigerator or freezer to be reheated later in the week.

There is also directions on must-haves and nice-to-haves for storage and prep, as well as how to pack freezer meals and safe thawing.

The recipes are divided into chapters: Breakfast & Brunch, Salads, Soups, Meat, Poultry, Seafood, Vegetarian and Sides. Each recipe has guidelines for making and cooking all the way through, refrigerating and reheating and freezing and reheating.

Breakfast & Brunch recipes include dishes like Savory French Toast Sandwiches with Tomato Jam and Honey and Herbed Ham and Cheese Bread Pudding.

Salad recipes offer dishes such as Spring Pea Salad and Buffalo Chicken Salad.

Soups offer dishes like Chilled Beet and Yogurt Soup and Russian Beef and Vegetable Soup.

Meat dishes offer mains such as Beef Picadillo Lamb and Bulgur Stuffed Zucchini and Stout-Marinated Pork Chops.

Poultry recipes include dishes like Almond-Crusted Chicken Tenders with Apricot-Mustard Dipping Sauce and Mini Turkey Meatloaves.

Seafood dishes offer recipes for Cajun Shrimp in Foil Packets and Herbed Salmon and Orzo Casserole with Feta.

Vegetarian recipes include African Peanut Stew and Portobello Pizza Pockets.

Sides wrap things up with dishes like Spaghetti Squash Gratin and Herb-Marinated Grilled Vegetables.

I tried out two different dishes, Beef and Bean Burritos and Chicken Curry with Green Beans. Both dishes were pretty easy to prepare and cook up to the stopping point. The burrito filling is made and wrapped in tortillas with cheese, and then baked or heated in the microwave later. The curry is made all the way through, and then can be reheated later.

The burritos, made with lean beef, low-sodium beans and whole-wheat tortillas, were a big hit with the kids and made 6 servings, plenty for us to have another time. The chicken curry also made plenty, and we had some to share with my parents. A word on the curry -it was spicy when we made it and we liked it, but it gets extra spicy the longer it sits!

For busy family nights, this is a great resource to have meals at least started for you that are healthy and tasty!
