Master mistakes with new cookbook

Editor-in-chief of "Food & Wine" magazine Dana Cowin has released a "learning-to-cook" cookbook in "Mastering My Mistakes in the Kitchen" (Ecco, $34.99.)

With 65 famous chefs helping, Cowin explores more than 100 recipes and where she went wrong in trying to cook them. In "confessional" style, Cowin talks about the dishes she tried to make and what went wrong, and the chefs' tips on fixing it. The recipes in the book are divided into Starters and Soups; Salads; Vegetables; Poultry, Meat, Seafood, Pasta, Beans and Grains, Breakfast, Breads and Warm Toasts and Desserts, all with tips from the chefs.

Starters and Soups offer Pot Stickers with Ming Tsai and Spicy Watermelon Gazpacho with Alex Raij.

Salads include Butter Lettuce with Sweet-Tart Dijon Dressing with Suzanne Goin.

Vegetables include Roasted Winter Vegetables with Miso Vinaigrette with April Bloomfield.

Poultry recipes include Chicken Thighs with Smoky Vietnamese Caramel Sauce with Andrew Zimmern.

Meat recipes include Pork Chops with Five-Minute Umami Sauce with Bobby Flay.

Seafood recipes offer Mexico City Shrimp with Rick Bayless.

Pasta, Beans and Grains dishes offer Baked Ziti Arrabbiata with Mario Batali.

Breakfast, Breads and Warm Toasts include Buttermilk Biscuits with Maple and Black Pepper with Joanne Chang.

Desserts offer Milk and Dark Chocolate Chip Cookies with Cheryl Day.

I made Halibut with Red Coconut Curry one day for dinner. I ended up having to work with red curry powder, which did not have the same effect. I also had to settle for tilapia. The dish was simple to assemble, you make the broth and then the fish cooks in the broth on the stove for a few minutes. This is a great first recipe for a fish-cooking novice. The color of the broth didn't turn out like the picture, tbut I thought the flavor was good, and everyone ate it up quickly!
