Southern cooking gets super fast

Southern Living gets comfort food to the table in 20 minutes or less with "Super Fast Southern" (Oxmoor House, $19.99.)

This book is made with busy families in mind to get dinner ready quick and with little fuss. The book is divided into Quick Bites, Fast & Fresh Salads, Soups in a Jiffy, Express Sandwiches, Speedy Skillets, Simple Suppers, Snappy Sides and Hurry Up Sugar.

Quick Bites has appetizers and snacks like Layered Nacho Dip, Spinach-and-Parmesan Crostini and Country Ham Mini Biscuits.

Fast & Fresh Salads has Black Bean Salad, Salmon Salad with Avocado and Melon and Crispy Prosciutto Salad.

Soups in a Jiffy has recipes like Meatless Chili, Tomato-Basil Bisque and Beefy Minestrone Soup.

Express Sandwiches include Greek Turkey Burgers, BLT Benedict with Avocado-Tomato Relish and Slaw Reubens.

Speedy Skillets include Fried Catfish with Pickled Peppers, Pork-and-Green Bean Stir Fry and Shrimp Fried Rice.

Simple Suppers has recipes like Pan-Grilled Chicken with Fresh Plum Salsa, Pork Chops with Shallot-Cranberry Sauce and Pepper Steak with Roasted Red Pepper Pesto.

I made two different recipes out of the book, Cheese Ravioli with Tomatoes and Mascarpone and Turkey Tetrazzini, substituting chicken for turkey. The ravioli dish was ready in 20 minutes total. Frozen ravioli were boiled and then tomatoes roasted in the oven, then tossed with herbs and mascarpone. The charred tomatoes added a sweet yet smoky flavor and there was plenty for everyone! The tetrazzini used canned cream of mushroom soup, cheese and some herbs to make a quick dish that was ready in about 18 minutes. The serving size said 2 servings, but there was enough for the 3 of us, even if the youngest did complain she could still see the mushrooms. I liked the easy prep and clean up of both dishes.
