‘Weeknight Wonders’ brings healthy dishes

Ellie Krieger recently released a new cookbook that will get a healthy dinner to the table in 30 minutes or less for the whole family with "Weeknight Wonders" (Houghton Mifflin Harcourt, $29.99.)

Krieger admits in her introduction that on a busy night, it can be easier for busy families to choose takeout or microwave food rather than cook something, but she shows that fixing food means smarter portions and fewer calories. With 150 recipes that are quick fixes, she hopes to make choosing to cook an easier and healthier choice.

The recipes are divided into Salads, Soups and Sandwiches, Meat Dishes, Poultry Dishes, Seafood Dishes, Vegetarian Dishes, Sides and Desserts.

Salads includes recipes for both starters and side salads and main-course salads, like Indian-Style Cucumber Salad and Grilled Greek Salad with Chicken.

Soups and Sandwiches include recipes for Creamy Asparagus Soup and Cariibean Chickpea Curry Wraps.

Meat Dishes include recipes for beef, pork and lamb dishes, like Rush-Hour Chili and Lamb Kabobs with Pomegranate Sauce.

Poultry Dishes include Parmesan-Crusted Chicken Breasts.

Seafood Dishes include recipes like Shrimp with Spinach, Garlic and Smoked Paprika and Pasta with Sardines and Broccoli Rabe.

Vegetarian Dishes include Broccoli Pesto, Tomato and Goat Cheese Pizza.

Side dishes include Orange-Balsamic Green Beans with Basil.

Desserts include Double-Chocolate Waffles a la Mode.

I made Colombian Chicken Soup with Corn, Potatoes and Plantains for dinner one cold night. This Cuban-inspired stew has potatoes, carrots, corn, tomatoes and plantains. I could NOT find plantains locally, much to my dismay, so I ended up having to use bananas, which is the same at all. It was a warm and filling soup.

Next time I think I'd put a bit more kick in it. My oldest wasn't a fan of the bananas in it, but liked the broth, though she agreed that next time we should spice it up.
